What deserves a check before deletion

Approvals, introductions, client history, receipts, attachments, and old correspondence are difficult to recreate after account deletion.
Files and calendar history tied to the same account
A Google or Microsoft account may hold more than mail. Review supported files and Microsoft calendar history before treating the account as only an inbox.
The records you expect to find years from now
Search a few names, dates, attachments, and periods you recognize. Verification should happen before the irreversible step.
